September is the month when many hunters have moose and other special tags ready to fill.
I created the following recipe for moose meatloaf but it can be used with any game you may harvest. It's tasty and is one of my favorite ways to cook moose.
For the meatloaf:
2 pounds moose burger meat
1 medium onion, chopped
1 cup Italian-style bread crumbs
1/2 cup water
1 teaspoon coarse ground black pepper
1 teaspoon salt
1 tablespoon dry parsley flakes
Monterey Jack cheese, cut into long strips about 1/2-inch wide and thick
For the sauce:
1 cup sweet relish
1 cup ketchup
Mix all of the meatloaf ingredients except the cheese well and place in a large loaf pan or casserole dish sprayed with vegetable oil. With your finger, make a 2-inch deep indentation down the length of the loaf and place the cheese strips in it; cover with meat.
Mix the sauce ingredients well and spread over the top of meatloaf.
Place in a preheated 350-degree oven of and cook for 90 minutes or until done. Remove from the oven and let stand for 10 minutes before serving.
